Chilgoza pine nuts come from the chilgoza pine, found in the forests of the Himalayan mountains. The pine nuts are actually the seeds of the pine cones, and come in a thin, dark shell that have to be manually peeled by hand.
The pine cones are collected by families in the Paktia province, in eastern Afghanistan. They gently toast the pine cones to make the seeds inside fall out.
